WP, these are a savory version of a muffin with cheesee and prosciutto. Substitution suggestions are below. .
Ingredients
6 tablespoons (3/4 stick/85 grams) unsalted butter, melted, plus more for greasing the pan
1/4 cup (50 grams) lightly packed light brown sugar
2 large eggs plus 1 large egg yolk
1 cup (240 grams) low-fat or regular sour cream
2 cups plus generous 2 tablespoons (270 grams) all-purpose flour
1 tablespoon baking powder
1/4 teaspoon baking soda
1 teaspoon fine salt
1/2 teaspoon freshly ground black pepper
6 ounces (170 grams) shredded extra-sharp cheddar cheese, loosely packed (a generous 1 3/4 cups)
3 ounces prosciutto, chopped (2/3 cup)
About 15 chives, minced (1/4 cup)
Instructions
1. Position a rack in the middle of the oven and preheat to 400 degrees. Generously grease the wells of the muffin pan with butter or cooking oil spray.
2. In a large bowl, whisk together the butter and sugar until well incorporated, then add the eggs and egg yolk one at a time, whisking after each addition. Whisk in the sour cream until incorporated.
3. Sift the flour, baking powder, baking soda, salt and pepper onto a sheet of parchment paper and use the paper to pour the dry ingredients into the butter-egg mixture. (Or, sift the dry ingredients directly into the bowl of wet ingredients.) Add the cheese, prosciutto and chives, and fold just until incorporated to form a shaggy batter. Do not overmix.
4. Fill the muffin pan wells three-quarters full (a scant 3/4 cup per well). Smooth the tops and bake for 20 to 22 minutes, or until a toothpick inserted in the center comes out clean or with a moist crumb or two. Remove from the pan as soon as they are cool enough to handle. Serve warm.
Substitution suggestions + other tips and ideas:
Instead of prosciutto >> use salami or ham, but avoid chunks of dried salami, because they tend to get tough after baking. You could also use sauteed mushrooms splashed with a little soy sauce for a vegetarian version.
I love the chives in this >> but feel free to substitute 6 scallions if that’s what you have.
In place of sour cream >> you can use Greek yogurt.
No cheddar? >> Any other sharp cheese will do.
