Cook's Illustrated, a good looking variation on remoulade. Here are their notes: Somewhere between a remoulade and Thousand Island Dressing, this spicy southern condiment gets plenty of kick from hot sauce, mustard, black pepper, paprika, and garlic. Ketchup and chili sauce add sweetness, raw onion lends some bite, and Worcestershire and lemon juice brighten it up. We process the sauce in the food processor for a silky texture, then keep it in the fridge to spread on sandwiches, use as a dipping sauce or salad dressing, and—our favorite—serve with fried catfish.
BEFORE YOU BEGIN
Chili sauce, a condiment similar to ketchup, has a sweet flavor and subtle spicy kick; do not substitute Asian chili sauce.
Ingredients
1/2 cup mayonnaise
1/3 cup chopped onion
2 tablespoons vegetable oil
2 tablespoons chili sauce
1 tablespoon ketchup
2 1/2 teaspoons Worcestershire sauce
2 1/2 teaspoons hot sauce
1 teaspoon yellow mustard
1 teaspoon lemon juice
1 garlic clove, minced
3/4 teaspoon pepper
1/8 teaspoon paprika
Instructions
Process all ingredients in blender until smooth, about 30 seconds. Sauce can be refrigerated for up to 5 days.
