Chocolate Shell Ice Cream Topping

I have two recipes for making a hard chocolate shell for ice cream. Here's the first, I kind of like it better than the second because this first one uses coconut oil. .

Ingredients

4 tablespoons refined coconut oil
3 oz bittersweet chocolate
Pinch of Salt

Instructions

Microwave ingredients at 50% power until smooth, stirring occasionally. Cool to room temperature and spoon or pour over ice cream.

 

Here's the second recipe. It's from WP and uses olive oil which I think is kind of weird.

Ingredients

1/2 cup (120 milliliters) extra-virgin olive oil
8 ounces (230 grams) bittersweet chopped chocolate or chips (64 percent)
1/4 teaspoon fine sea salt or table salt, or more to taste

Instructions

1. In a saucepan over medium heat, warm the olive oil until shimmering but not boiling.

2. In a medium bowl, combine the chocolate with the hot oil and, using a silicone spatula or whisk, stir until smooth. Season with salt, taste, and season with more salt, if desired.
