Chicken, sausage and shrimp. Feel free to swap around different meats, keeping the total by weight about the same; I'm likely to eliminate the chicken and increase the other two.
Jambalaya has rice cooked with it as part of the dish. The article references two types of jambalaya which vary mostly on whether or not it includes tomatoes. This is the "New Orleans" version which does. They also cook it in the oven instead of the stovetop, which minimizes stirring and pretty much eliminates burning the bottom. I don't know why most stovetop recipes don't switch to oven. I started doing it long ago with pot roast and it really does work better. Anyway Click Here for the recipe on their website.
