Found on Reddit, it's more of a dense loaf cake than bread. This is a very vague recipe but the picture looked good and I love lemons.
Ingredients
175g of butter
175g self raising flour
175g sugar
3 medium eggs
A splash of milk
Juice of one lemon and the zest of 3 lemons
Drizzle Topping:
Zest of 1 lemon
Juice of 3 lemons
120g of sugar
Instructions
To make the topping: mix ingredients in a pan, place over low heat and stir until sugar dissolves.
Put cake in a loaf tin ( I personally believe loaf tin gives the best results ) at 160-180 degrees Celsius for 50 minutes to an hour. Mine started to brown on top after 40 minutes so I covered in tin foil and cooked for an extra 30 minutes after that it depends on your oven really. Then while still warm pour the lemon mixture over the cake after you've pricked a few holes in. Do this very slowly allowing the mixture to soak in and then re pouring. Save a small amount of the mixture, add icing sugar, and when the cake has cooled pour this over the top also. To candy the lemons, blanch the lemon slices in hot water for 30 seconds then dunk in ice water. Then make a syrup by heating equal parts sugar and water, once the mixture is boiling add lemons and simmer for 10-20 minutes until lemons turn translucent. Then put the lemons in a single layer on parchment paper to cool, once cool either refrigerate or toss in even more sugar depending on how lemony you love your lemony baked goods.
