Some giffy recipe found on the Internet. Sort of a coffee cake replacement. Instructions are a little weird, since normally all the wet ingredients are mixed together, the dry ingredients mixed together, and then the dry are stirred into the wet, but whatever - it's from Canada.
Ingredients
For the Loaf:
1 Stick Unsalted Butter
1 Cup Sugar
2 Large Eggs
1 Lemon, Juiced and Zested
1 1/2 Cup All-purpose Flour
1 Tsp Baking Powder
Pinch Salt
1 Tsp Vanilla
1/4 Cup Cream
For the Glaze:
1-1/3 Cup powdered sugar
1/2 Lemon, Juiced and zested
1/2 tsp Vanilla
Instructions
Preheat Oven to 350 F. Grease & Flour a medium Loaf Pan. Cream Butter and Sugar together. In a separate bowl mix eggs and vanilla well, add lemon juice and zest. Add egg mix into the butter mix, beat slowly. Add remaining Ingredients and mix well. Pour batter into prepared loaf pan and bake for 40 minutes, or until toothpick test is clean. Cool in pan 10 minutes before removing to wire rack. Cool another 10 minutes before topping with glaze.
For the Glaze:
Mix all ingredients in a bowl until well combined and spread over warm loaf.
