1 Butternut Squash
Olive Oil
Instructions
1. Preheat oven to 400 deg F. Cut squash in half lengthwise and scoop out all the seeds. Coat the cut sides with olive oil
2. Cover a sheetpan with aluminum foil and place the squash halves on it cut-side down.
3. Roast for about 50 minutes until the squash is soft; you should be able to stick a fork through the them.
