This was found as a giffy recipe on Reddit, but it didn't list the ingredient amounts - in fact it was just a video. As a result I'm not listing ingredient amounts and the steps mostly consist of photos pulled from the video.
Ingredients
Bacon, diced
Yellow Potatoes, large
Onions
Olive Oil
Red pepper flakes
Salt and pepper
Instructions
1. Fry bacon in what looks like a 12-inch cast iron skillet until crispy. Remove bacon and save bacon fat.

Thinly slice potatoes on mandolin and put in bowl..
3. Thinly slice onions and put in bowl with potatoes. Pour olive oil over potatoes and onions and sprinkle with salt, pepper, and red pepper flakes.
4. Toss mixture with your hands.
5. Make a stack of potato slices alternated with onions. In the same skillet used to fry bacon, lay the stack on its side along the edge (sort of like hassleback potatoes). Repeat until skillet is full.
6. Brush with reserved bacon fat and bake at 375deg F for 90 minutes.
7. Sprinkle with thyme leaves and fried bacon pieces.
