I've collected so many spice rubs and mixes from various sources that I've decided to consolidate them all on one page. Here they are.
Ingredients
1/3 cup paprika (2 ounces; 60g)
1/3 cup dark brown sugar (2.5 ounces; 70g)
1/4 cup kosher salt (1.5 ounces; 45g)
4 teaspoons (12g) ground mustard
2 teaspoons (6g) freshly ground black pepper
2 teaspoons (6g) ground coriander seeds
1 tablespoon (5g) dried oregano
1 tablespoon (10g) granulated garlic powder
1 tablespoon (10g) granulated onion powder
Instructions
Mix ingredients in small bowl, using your fingertips to break up any large clumps of brown sugar.
I think I cobbled this together from various sources one evening, it worked pretty well.

From Cook's Illustrated. They say it's delicious on grilled chicken. I question the use of so much paprika but then there are a lot of other spices too, it appears to make a relatively large batch. They say it stores for up to three months.

Whisk together 1/2 teaspoon each kosher salt and freshly ground black pepper with 1/4 teaspoon each of sweet paprika, cayenne pepper, dried oregano, onion flakes and granulated garlic (a.k.a. garlic powder).
This is from a Chipotle Chicken Sandwich recipe from WP. It's a paste for marinating chicken but I'm thinking tt might also be a pretty good dry rub if you omit the canola oil and lime juice.

3 tablespoons canola or another neutral oil, plus more for greasing the pan
1 tablespoon fresh lime juice (from 1 to 2 limes)
2 teaspoons chipotle powder
2 teaspoons smoked paprika
2 teaspoons garlic powder
2 teaspoons ground cumin
2 teaspoons ground coriander
1/4 teaspoon table salt or fine sea salt
In a medium bowl or resealable container, whisk together the oil, lime juice, chipotle powder, smoked paprika, garlic powder, cumin, coriander and salt to create a thick paste. Rub over chicken then cover and refrigerate for 15 to 20 minutes or up to 2 hours. Or, omit the oil and lime juice and use as a dry rub.

Combine the garlic powder, onion powder, cumin, turmeric, black pepper, salt and ground achiote powder or sweet paprika in an airtight container, cover and shake well to incorporate. Store in an airtight container indefinitely. (Note from Joe: nothing lasts indefinitely, spices can lose potency, and paprika in particular is known to have a short shelf life).

Ingredients
3 tablespoons packed brown sugar
1 tablespoon paprika
1 tablespoon chili powder
2 teaspoons garlic powder (or granulated garlic)
3/4 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon cayenne pepper
Instructions
Combine all ingredients in small bowl.
From Cook's Illustrated. An unusual blend based on shichimi togarashi, a Japanese 7-spice blend. I don't know if I'll ever use it but it looks interesting. Stores for one month.

3/4 teaspoon grated orange zest
2 teaspoons sesame seeds
1 1/2 teaspoons paprika
1 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon ground ginger
1/8 teaspoon cayenne pepper

Place orange zest in small bowl and microwave, stirring every 20 seconds or so, until zest is dry and no longer clumping together (1 minute 30 secondes to 2 minutes 30 seconds). Combine with other ingredients in a mall bowl. Sprinkle over udon or soba noodles, rice, soft-cooked eggs, french fries or grilled meats.

Ingredients
1 tablespoon cardamom seeds
5 cm (2 inch) cinnamon stick
1 teaspoon black cumin seeds (use regular cumin seeds as a substitute)
1 teaspoon cloves
1 teaspoon black peppercorns
1/4 average-size nutmeg
Instructions
Place all the ingredients in a clean electric coffee grinder (or spice grinder). Grind for 30-40 seconds or until finely ground. Store in a small jar with tight fitting lid away from light and heat.
