I got this recipe from a friend. It is basically like chili. It's the kind of recipe I like: it's really easy (all you have to do is chop an onion, brown hamburger, and open a LOT of cans), the ingredients are easy to keep around (if you keep hamburger in the freezer) so you can fix it anytime, it makes great leftovers, and it's really good. It does make quite a bit of soup.
Ingredients
1 lb Hamburger
1 large onion, chopped
3 16oz cans Chili beans, undrained
1 16oz can whole kernel corn, undrained
1 16oz can chopped tomatoes, undrained
1 15oz can tomato sauce
1-1/2 c. water
1 4.5oz can chopped green chilis
1 1-1/4 oz pkg taco seasoning mix
1 1oz envelope Ranch style salad dressing mix
Toppings: Tortilla chips, shredded cheese, shredded lettuce, chopped tomatoes, sour cream, chopped avocado.
Instructions
The recipe card only listed ingredients, didn't really say what to do with them. Here's how I fix it:
1. Brown the hamburger and onion in a large pot.
2. Sprinkle the taco seasoning and ranch dressing mixes over the hamburger and stir. Stir in the rest of the ingredients and bring to a low simmer.
3. Simmer for about 20 - 30 minutes and serve.
