This very weird recipe was found via Reddit, it was making the rounds on social media platforms. WARNING - I have tried it but I no longer make it. The problem is, it is very strong with an extremely high caffeine content; it makes me nauseous, makes me dizzy and gives me heart palpitations. Other people may not have as serious a response. Here are my notes from when I used to make it:
This recipe is actually coffee whipped like whipping cream. Instant coffee is a requirement because the emulsifiers used to make instant coffee are what provides the ability to thicken. I'm thinking it might be interesting to add cocoa to the instant coffee mix (for a mocha flavor) and maybe even adding rum to the final drink (just because). Warning - this provides a very intense caffeine high. The first recipe below is a modified version designed for my preferences and equipment, and below that is the original.
My Version:
Ingredients
6 tbsp instant coffee (must be instant)
6 tblsp sugar + 3 tblsp sugar
6 tbsp hot water
3 cups milk
Ice
Instructions
1. In a medium sized bowl (note to self: use medium size glass bowl), combine the instant coffee, 6 tablespoons sugar and hot water. Using a hand mixer or stand mixer (I use my stick blender with the whisk attachment), whip until fluffy and toffee-colored, about 3-4 minutes.
2. Pour milk into jug (note to self:: use square glass jug). Add 3 tablespoons sugar and whisk together by hand (don't use the power stick whisk, it will over-whip it).
3. Spoon in the whipped coffee one spoonful at a time and gently whisk in by hand. When about half the whipped coffee is added you can start using the stick blender whisk at lowest power, just be sparing or else the entire mixture will be too fluffy and not easy to drink.
4. Add ice to a glass and pour the milk / whipped coffee mixture over it. Put lid on jug and store remainder in fridge.
Original Version:

2 tbsp instant coffee (must be instant)
2 tblsp sugar
2 tbsp hot water
Ice (if desired)
1 cup milk (if desired)
cocoa powder or cinnamon to sprinkle on top
Instructions
1. In a medium-sized bowl, combine the instant coffee, sugar and hot water. Using a hand mixer or stand mixer, whip until fluffy and toffee-colored, about 3-4 minutes.
2. Add your ice to a tall glass, if desired, and then pour over your milk. Spoon the whipped coffee on top. The more whipped coffee you use, the stronger the drink will be. Sprinkle with cocoa powder or cinnamon, if desired.
3. Using a spoon or straw, stir the coffee mixture into the milk before drinking.
